RAGOUT AL PACCANTINO
Vegan, delicate casserole with grilled aubergines, red peppers, tomatoes, onions, and spices.
To cook:
Heat contents in a saucepan and try halving a couple of courgettes and filling them with ragout – garnish with green asparagus halves
and sprinkle with parmesan. Serve with pitta bread or polenta.
